Johnny also has mentioned in interviews before that the show wouldn't work without Sheldon.... Also, it wouldn't work without Leonard or Penny either... Now if CBS wanted to cancel it Lorre might have been able to shop it around I think Johnny is a pretty publically emotionally demonstrative in real life (and Jim is less so) so he may be more emotional about it and Jim less so. I base that on the awkward hugs between Jim and the producers and others when Lorre won the lifetime achievement award, backslaps and hugs when the Big Bang stage was dedicated, and his general interactions with pretty much all the cast. That said Johnny and Jim’s comments both seem to indicate it is time. Kaley and Mayim seem to play lip service to going out on top etc. It feels like the official line. Mayim was all but campaigning for the show to stay on at the end of last season and beginning of this season so I think she is just being a good soldier. If they are smart they are set for life. Kaley would have been emotional whenever the show ended, that's just the type of person she is. She wears her heart on her sleeve. When you work together for 12 years you go through a lot together personally and professionally.
